As we start to get to know each other, you will see that at times I lean into baking items that tend to be a bit dry. I love a good scone or a biscotti with my coffee, or earl grey tea. Although those around me that don’t love baked goods that can be dry in texture, have I found an AMAZING scone recipe for you to try!
It is simply delicious, and truly the moistest scone I have ever eaten. The slight amount of lemon zest is just enough to elevate the taste of the scone. Usually scones in my house last for 3-4 days, with me mostly nibbling at them, but this time the entire batch was gone by the next morning.
I followed this recipe very closely, although I did add a little bit more blueberries to the recipe because I had so many in my refrigerator!
Please, please do not skip the step of putting the cup of cream in the freezer for at least 15 minutes. It is such an important step to having a flaky dough. I did skip adding the glaze, as the coarse raw sugar on top of the scone was enough sweetness for me.
